This was my first time at the Meat Cleaver and I had a great experience. Based on a very good estimate of how much meat would be available after weighing two whitetail does, I ordered three types of jerky, a roast, breakfast and summer sausage, and 10% fat ground venison. They vacuum seal everything and label the individual packs, and is as nice a packaging as anywhere I have ever been and nicer than most. Quick turnaround times make this my go to from here on out.

I have brought in 3 animals so far and always received quick, courteous service and upfront pricing. Back up to their loading dock, then they hang and weigh your animal and offer you a selection of options- steaks/roasts/grind/sausage etc. They do a great job vacuum packaging/labeling and will customize to your preferred serving size. Personally, the breakfast sausage flavor was not my favorite, but yes to the pepperoni sticks!
Very quick turnaround even in peak season. Very competitive pricing.

I'm not sure why there's a one star post on here about Steve's Meat Market. This isn't Steve's Meat Market and has no affiliation. The prices here are more than reasonable by comparison and you couldn't get a group of guys any easier to deal with.
We took our elk to the Meat Cleaver last year for processing and packaging. A year later, everything is still well sealed and we have NO freezer burn on what we haven't managed to eat yet. Every single package has been a great cut and is without hunks of fat and gristle. They work with you on package sizes so you can customize how many servings you want in each package (we opted for 3 and got reasonable sized portions similar to what you'd buy in the grocery store for beef). I don't think you could get a better processing job done anywhere and certainly not at such a reasonable price. We didn't opt for sausage so I can't comment on that.
The place isn't fancy digs (just a loading dock with a small office, processing room and a huge freezer. Whole animals are hung over the loading dock for skinning (got to watch this being done and it was pretty awesome). You go inside to pay and get to see everything as you walk in. It's clean.
Bottom line - other than location (which is a long drive for me) I would highly recommend. We'll be using them again provided we get another animal.
